Should I use a paint sealant? I used Olympic premium interior latex paint water based. The people at lowest said it was the lowest voc, non toxic paint they had.

A paint sealant will make cleaning a bit easier. Did you use a flat paint, or a gloss? If its a gloss, it should hold up a bit better to cleanings. If its a flat paint, definitely seal it.

I used semi gloss. If I seal it should I seal it the way they seal the fake rocks? Watered down gorilla glue and Spary on

No, use a real sealer. Water based polyurethane or polycrylic will work very well.
