They'll be fine. Not sure what species are all illegal in florida, but there are also Eublaberus species out there that dont fly/climb but the orange heads can be pretty stinky from what I've read. I got distanti and ivory instead. They do better on a substrate though. I got a bunch of new species just recently, but I dont have adults yet. I also got 3 species of Blaberus, but they are all bigger species than discoids. I also got some Cuba Brown Burrowing Roaches that look like dubia, but the females are bigger than dubia, and the males are shorter/wider. Those are said to breed about the same as dubia and have similar care and might be something worth looking into if you like the idea of knowing their sex at a glance.
