So Queso has been looking a little skinny lately. I feed him around 12 large crickets a day, plus dried food. I think he eats plenty, and he still has giant poos every other day, but I’m worried. Should I take him to the vet?

His fat stores in his tail and head aren't depleted, so he isn't at an unhealthy low weight. Some dragons, especially the males, are more slim built like that. Based on the pictures alone, I'd say he looks to be a healthy weight.
You do need to get him eating salads though. Salads provide a lot of needed nutrients that are required for your dragons good health and weight.
