No, it takes a few weeks usually to adjust, and having her eat already is quite good. As long as her appetite picks up in a few week's you have absolutely nothing to worry about.

The thing with plants are your beardie will almost definitely attempt to eat the plant or the soil which can cause impaction or poisoning, so having them in high pots where they can't reach the plants is good.
