was wondering if i could make a salad for that day and make other portions for the following days but can i just freeze the veggies that i do not use so that they stay fresh for the following days.
I have never tried freezing it, but I do make 2-3 days worth of salad and refrigerate it in separate containers. Freezing leafy vegetables will probably cause them to become soggy and limp. I find that my greens stay fresh in the refrigerator for well over a week as long as they are nice and dry, and stored in the crisper drawer. Don't wash the vegetables all at once. They will last much longer if you only wash what you will be using in the next day or two.
