Hello,artichoke heart or shell

Hello everyone, I have two bearded dragons (Cleo,flecher)who I want to introduce artichoke too...I was just curious as to what part do you feed them the heart or the leaves...I don’t know too much about artichokes and recently started introducing bok Choy and endive any input is appreciated thanks again
