Adopting an adult is a great idea. A lot of them need a happy home. I feed my adult a bug meal once or twice per week. Usually roaches but I give him silk worms or horn worms or black soldier fly larvae sometimes too. He mostly eats salad though. I make a fresh salad for him every morning and that is his main food source. I usually put 2-3 things in the salad and rotate depending on what is fresh at the store each week. I just picked up a huge zucchini squash at the farmers market for $1 and he's been tearing through that all week along with collard and turnip greens and some chopped up green beans which are starting to wither a bit so the rest will go to the roaches today or tomorrow.
