Humidity: "desert" range, I keep mine between 30-35%. Never go above %50 due to higher risks of respiratory infections (like pneumonia with us where fluids build up in our lungs, we don't get enough oxygen and build up a lot of co2, we get weak, it's painful...yeah, same with dragons).
Ways to lower humidity: the obvious- get a de-humidifier (I suggest this be your last option, there are other ways to lower the humidity). Turn on the AC and open the door and vents in the room, allow the cool crisp air to flow in and out of the room instead of just sitting.
Shedding: dragons grow at different rates and therefore will shed at different rates. If you could provide a picture of your beardie's tail, maybe someone with more experience than myself can help you out. My little guy takes a while to shed, his body (or just certain limbs) will grey out like what you are explaining and at that point it just sits until it's ready to come off.
As far as veggies go, don't freak out because a lot of dragons don't eat veggies right away...a lot are really picky when they are young (remember when you were a kid and your parents said to eat broccoli, celery...without the peanut butter, and the..gasp asparagus, yuck). KEEP OFFERING AND OFFER VARIETIES. Always offer because you never know when your baby will decide to eat the veggies and offer a variety because some are picky eaters and want specific things. I know Roku wants nothing but Mustard Greens and HATES Collard Greens..he smells those collards and refuses to touch the veggies.
