I know it sounds crazy but if you place the shirt you wore that day into his tank at night.. he gets use to your scent and they begin to calm down around you. Trust me, i've done this will 3 dragons and it works :D

Do you have Moe in a ten gallon? i would consider changing your tanks from horizontal to vertical. Crested geckos are aboreal and will spend the majority of their time in the leaves and branches of trees. Giving him more height will be better for him. As for shedding, in no way shape or form...

I would introduce collard greens, mustard greens, escarole, along with some butternut squash. i would be persistent and give him salad EVERY day despite not eating it , he will eventually.

canned crickets have no nutritional value.. and they have a rank smell! Maybe look into feeding them worms when you go on vacation. Super worms are easy and can be fed to dragons over 16 inches in length. You can even give your family tweezers to use so they dont even have to touch them.
