What veggies and Fruits?

I got my beardie last Christmas and the only veggies he likes to eat are carrots, is there any other things I can feed him at he will love? I kinda wanna give him a special Christmas. So is there any good fruits and veggies I can give him that he will love? Anyone have any types of fruis I could try?

Dandelion greens and yellow squash are a huge hit with my beardie. I would start with those two and then keep expanding his daily greens.
