So, I had a long day at work today, but I needed something for dinner and some more greens for Blazey. She has been a champ about eating her greens, but even at her young age, I don't expect her to eat a lot. I feed more greens to the crickets and throw away more than she actually eats. But, hey, at $1 a bundle, I can't complain.
So, I have been seeing butternut squash for sale a lot now that it's Fall, and I have seen a lot of folks feed them. I have also seen a lot of it cooked on Food Network... so, I figured I would pick one up. I got the smallest squash they had. I brought it home and cut it in half length-wise. Half for me, half for Blazey.
Now, I drizzled my piece with olive oil, salt and pepper (after removing the seeds, of course) and put it in the oven at 350 for an hour. Then I sat with a big cutting board in my lap in front of the tv and cut her's up into tiny pieces. I tried to shred it, but my shredder has tiny holes and it was just a big mess. Eh, I had an hour to kill anyways.
So, I cut up a bunch of veggies (I've been cutting up a week's worth at a time lately), squash and collards. Then I made her a little salad. Usually I have to put some phoenix worms on top to get her attention, but she went for them. She ate a few pieces of squash and some collards. I have a good little girl! I can't really tell if she liked them, but she took at least a second and a third bite of the squash. She may like that they are different colored.
Anyways, after an hour, my timer went off and I checked my squash. It was done. It was so freaking good, too!! I can't say how good it was. Next time I cook it, I am going to fully peel it and cut it into 1 inch squares. Drizzle with olive oil, salt & pepper and roast it this way. The dark spots on top were the most delicious! I have had summer squash my whole life (grew up in the south, of course!), but I have never had the opportunity to eat the nice winter squashes.
Anyone have any good recipes for this stuff? As it is, my baby cannot possibly eat an entire squash before it were to go bad, so keeping foods that benefit more than her around is a good thing!
If you haven't tried it, give it a go. It was kind of like a sweet potato, but I think better!
