Just picky or cause for concern?

Cheese is about one year old, and has started refusing salad over the past month. He is still eating calcium-dusted dubia roaches a few days each week, but not nearly as many as he did a few months back. Every time I give him horned worms he doesn’t hesitate one bit, though. I put bee pollen on his salad a few times, but even then he’s not interested. I’ve been sneaking collard greens with the worms I give him so he’s getting some veggies at least. He has been pooping normally also. He’s been laying in his hides a bit more during this time as well, but perks right up and runs around like usual and wants to go outside whenever he is out of the enclosure. His basking spot stays right at about 100F, and cool side is about 78-80F. He has the fancy Reptizoo T5 10.0 UVB (I think that’s the right info) that everyone recommends, placed on top of screen 10” from basking spot. Humidity stays around 30% during the day, but rises to about 40-50% at night when the lights are off. Night temp is usually around 70F, give or take a degree or two. He isn’t acting out of the ordinary other than being mad picky about food and lazy in his house! No black beard (although I’ve never seen his beard black), no agitation, no weird poos, no twitches, no other symptoms or strange behavior… any suggestions on why the sudden hatred of salad and how to correct his diet? Also is this something to get him to the vet about? He definitely does not appear sick or malnourished at this point, but I am a little worried if he doesn’t get a proper diet back that we could be headed that direction.

This sounds like pretty common behavior, nothing to worry about. They do get picky at times and it's tough to get a variety of food in them. The hornworms are a really popular treat. My dragon will leap into the air to grab them and run across two rooms of the house if he sees one. It's fun to offer them, but I keep them as an occasional treat (ordered a couple few times a year).
The slow behavior can happen at various times of the year and seems cyclical. They will have times of less energy and times they are wired. It depends on the dragon and you'll notice individual patterns over time. I would keep a log of his weight at steady intervals so you can keep an eye on the trend (Easy to add in a spreadsheet graph) over the course of time. You'll see seasonal and short term fluctuations but the trend should be relatively stable over the course of a year. Significant/sustained drops can be noted and looked into if needed.
As far as getting veges back into the diet, you can try reducing the bugs to just a couple of times per week while still offering salads every day. Try hand feeding to create some movement. I've found that I can sometimes gain their attention that way. Offering some different options or colors might help. Try some swiss chard or different bell pepper colords. Also, cutting squash into small worm shapes has been popular with my dragon to the point that it's now most of his diet (to my frustration).

Mirage came out of brumation on April 26. He was doing great. On May 2 he started acting funny. We just redid his tank, and he keeps going into one of his hides. He just lays there. He shows no intrest in food. HELP!
