Feeding Chinese vegetables?

It's a bit harder to find the vegetables that end with "greens" in the name around here (collard greens, mustard greens, turnip greens, etc.). In fact, I've only seen collard greens around here and even those aren't usually in most grocery stores. And those are the ones that are listed as good staples, too!
But we do always have chinese vegetables in the fridge such as bok choy, gai lan (chinese broccoli, choy sum (chinese flowering cabbage), etc. Would those make good veggies to feed?

I just set Swordtail's timer for his bath and paused it so I could actually fill his soaking bowl up and he crawled over my phone and canceled the timer 🤣
Mirage came out of brumation on April 26. He was doing great. On May 2 he started acting funny. We just redid his tank, and he keeps going into one of his hides. He just lays there. He shows no intrest in food. HELP!
