Hey Yoshi! This is exactly what I do. I try to feed my dragon and pacman frog almost exclusively males, to allow the nymphs to grow. I'm in the same situation.. when I cleaned the tub out almost two months go I did a hard audit and found my ratio was almost 1:1! So naturally I've been culling the males.
The very small nymphs I do give to my gecko to mix it up, but usually she takes mealworms and crickets.
As far as potato, sure you can give them that to eat, but I wouldn't use it as a gut-load. When they are done with it the skin looks like a deflated football. :lol: I use it along with other veggies, grains, and fruits. Stuff like what you listed.
