Yeah, they'll leave behind a really flat, dry skin/shell thing that just looks like a whole roach, but it's flat and empty. You won't see a lot of them... From what I've noticed, the roaches like to hang on to the top of the egg crates, push out of their skin, and then the skin tends to fall down into the egg crates. Also, the baby dubia will eat the abandoned skins sometimes, and sometimes the skins just end up falling apart/getting ripped up by other dubia crawling on top of them. So it's not surprising you haven't seen any. How many dubia do you have?
As for a humidity gauge, you want to use a digital one. A lot of people will recommend one that you can get at walmart, I believe it's called Accu-Rite (or, that's the brand name). It's only like $10, and it's a temp/humidity gauge with a probe so you can get temps of two different locations.
