I agree that every beardie is completely different.
They all have different loves and hates, ranging from food, to basking spots, to handling techniques.
I really dont believe there is a generalised rule which would allow you to pick a guarenteed calm beardie. Many beardies even go through 'puberty' where they will be little monsters for a couple of months whilst they are maturing.
I very much agree that their temperment depends on their keeper and the relationship they have.
I
wouldnt however agree that they are the way they are from infancy.
I rescued an adult, who had never been handled, and had been attacked by other lizards. We had to tame her from scratch. She was terrified and defensive when we first got her (ive had my share of bites!) and a month later she is now an affectionate bossy little sweetheart. (She is currently sleeping half way up my bathrobe)

All i could say is if your after a healthy one when you visit the breeder to watch the beardies for a while.
If your choosing a baby select an active little one, if your choosing an older beardie make sure they are basking and seem well-fed.
Im sure you could ask the breeder to let you come in at feeding time so you can see they beardies eating and try handling one or two.
At the end of the day your heart will most likely choose one for you!
I went in looking for my first beardie, wanting a baby, and ended up rescuing a disabled adult.
