Bearded dragons colour changed to almost grey/white.

My beardie has never been a dark guy but he's gotten a lot lighter since I got him.

What kind of things could cause him to get lighter?

He looks like he's about to shed but that's just my opinion

I've never seen him shed :/ is it a painful process?

Not painful. Just itchy. Try giving some warm baths. Don't peel the skin off yourself. It is very tempting when their skin starts coming off, and they look miserable.

How long does it take? Does he need food or lighting changes to accommodate it?

Once it starts peeling, it goes pretty fast. No changes in lighting or food. However, your beardie might not want to eat as much, and may get grumpy.
Make sure you keep him hydrated. It helps.
