We're doing the same thing
We eat a lot (!) of veggies, and he get suitable raw trimmings from what we eat that day. Other than the insects, there is nothing I (have to) buy extra for my dragon.
(It's clear that "trimmings" does not mean anything bad, with mold or such... Just things that I otherwise might nibble in the kitchen, like the "lid" of a bell pepper, or otherwise would end up in the freezer like the kale that's enough for more than one meal for us humans. Or just putting away a bit from what I would put in the pan - summer squash for us today? Two slices are for Taco
Ate some tuna (the prickly pear fruit, not the fish) today - of course I offered something to Taco.)
Generally I find food for my dragon much easier than for other animals where I must get a special "their food".
