Adopted Dragon issues

So first some history on CopperTop the dragon.
I got him from a kid about 2 weeks ago. Is is about 15 months, give or take. They just made an 8 hr or longer move from their old home to here (utah). The kid is 7 yrs old and they got him as a baby.

Cage
They had him on sand (yuck) and were not using the correct lights his cage. I have since changed his substrate to carpet, and upgraded his lights to keep him a bit warmer.

Food
All I know that they fed him was cricket. I have tried a few veggies, spinach, broccoli, mustard greens and romaine lettuce. He will eat the spinach, but none of the other veggies. I have also fed him millworms, crickets and phoenix worms with him only eating the crickets, though he is not very good at catching them. (smacks his head, or just flat out misses them)

He is also not very friendly, doesn't like to be held or picked up. And we have cats and a dog that are very interested in him, which freaks him out. He also is quite bitey.

So these are the problems that I am having. Any input would be appreciated. I want to keep him, but if I cant get him to be friendly I don't know if I can.

Since the dragon lived for about a year in less than ideal circumstances it will take some time to get him right.

First, it's best not to feed spinach or mealworm as both could be harmful.

Second, make sure you have the correct temps and UVB lighting.

Once temps, lighting and diet are correct I would just see how things progress over time. Let him get healthy and let him get used to you, your scent and your voice. Take things slowly!
Only time will tell if the dragon can be rehabilitated and tamed.

With his age and bad eating habits, how many crickets should he get and how often?

I'd offer crickets once a day (at around the same time) for about 10 minutes. Provide them dusted in small batches of maybe 5 at a time and repeat for 10 minutes or until he loses interest.
