I notice my guy doesn't like being picked up and not feeling secure. You gotta make sure to support his tale or he'll flail around. If my guy tries scrambling out of my hands while I pick him up I just make sure to support his tail and his limbs properly and try to talk to him to calm him down...

Give him a week or so to adjust to his new home. After a week or so he shouldn't be so cranky around you and pick up his appetite.
