You can stain it, you just need to seal it. Use a water based polyurethane to seal it after staining, and give it several weeks to cure. It should be good to go at that point.

Several weeks is a touch much. Just a few days would work. Point a fan into the tank to speed things up. Just test it to make sure all the smell is gone before you use it
so i decided that im not going to stain the inside like i did with the outside of it.
I used mineral oil and it came out pretty nice. Brought out the grain of the wood without changing the color. no odor too which is a bonus.
