you should be giving them a salad every day to leave in their tank, if you dont have live feeders for the morning he may just eat the salad or might not since he's young he just might want live food, one skipped feeding won't hurt him much but just a word of caution my bearded dragon eats...

i use a normal nail clipper and i just do it when they're too sharp, you just cut off the little point and no further in, you can tell where the quick(i dont know if its called this on beardies but its the same on dogs) is on their nails quite easily and just cut right under it.

i'd highliy suggest investing in a digital thermometre the dial ones dont give proper temperature readings, you might find out your temperatures are off and that couuld be the problem if htere is one
