I thnk that Karrie is right, seems like possibly something stuck way down his throat. Might need to have a vet put a scope down his throat to see if there's something obstructing his airway.

As far as the pellets go, a lot of them tend to have genetically modified ingredients in them & can often
cause health issues. Have you stopped feeding them since he had trouble breathing, etc?
As Karrie suggested, getting a digital probe to measure the temperatures would be helpful in case he
isn't getting warm enough.
