Staple Leafy Greens for a Picky eater

My bearded dragon eats his insects really well, but he only likes certain greens. He really likes Bok Choi, Romaine Lettuce, and Butternut squash (these are the things I have tried with him in the week and a half I have had him), but I know these are not staple veggies. I tried collard greens and spring mix, and he seems to avoid it. I am thinking he likes the crunch of those veggies, so are there any types of staple veggies that are crunchy, nutritious, and hydrating? I also tried bee pollen and he seems to avoid that too. Could it be the calcium/multivitamins I give him? I estimate him to be about 6-7 months of age. I also gutload the dubias he eats. Thank you in advance!

Romain Lettuce is actually a very good staple. Mine love Arugula (Rocket), Romain Lettuce, carrots and most kind of flowers, like Hibiscus, Dandelion, etc.
