Specific varieties of vegetables?

With vegetables, especially greens, are all varieties of each safe for feeding?
For instance, different types of clover - white, green, red, etc.; or dandelion greens from common, red seed, or Japanese varieties?

I’m slowly collecting supplies for a garden this coming spring and would love to add some plants for Jasper, but I get nervous since a lot of plants are incorrectly named for looking similar to a different species.

Would love to get more info on this as well! I think endive/escarole are safe for them to eat no matter the variety? Also kale and the whole collard greens family
