He's probably being stubborn? What is his weight? Can you post some photos of him?
If his weight is stable then I would hold back on bugs completely for a bit and offer a daily salad, rotating what you offer depending on what looks fresh at the store. After a while he will get hungry and dig in. As a 2 year old that should be his primary diet. My dragon is about the same age and he gets a bug meal (mainly dubia roaches but sometimes silk worms or black solder flies in between) every few days. It may take a while to get your guy into that habit but be patient.
I've had good luck using chopped squash and green beans mixed with a variety of greens. Sometimes he likes bell pepper too so that is in the rotation as well. Usually have to do a bit of experimenting to see what their individual preferences are.
He looks pretty healthy. If you can get a gram kitchen scale then it will help you to keep track of how his weight is trending. It's a good indicator of overall health so it's a tool worth having. I'll bet he's just being a bit stubborn so I'd hold back bugs for a little while and see if he starts to dig in.
