Feeding a 6 month old Beardie...new Beardie mom

Hi everyone,
I'm a new Beardie owner with a couple questions. When we bought our Beardie they gave us pellets but he obviously is not fond of them so we are trying to make sure we feed him enough of everything else. We only got him 3 days ago, we have been feeding him 7-8 crickets a feeding 3 times a day and giving him veggies. He hasn't touched his veggies at all yet so that is one of my questions. We've tried fresh green beans and carrots so far because that's what we already had in the house but I'm guessing we will have to try something else. Any suggestions for a good mix? And my other question is are we feeding him enough crickets? He usually has one at the end that he doesn't eat right away so I figured since he was slowing down that we were feeding him enough and he was getting full but I just want to make sure. We adore the little guy and want to make sure he has everything he needs. TIA.

ETA We actually aren't sure yet if it's a male or female, we've just been calling it a he, this is off topic but what age can you tell the gender?

You can tell the age now ! Just place this dragon on a flat surface, and gently lift tail, until you feel resistance. Looking at the base of the tail, just above the Anal Vent if you see 1 lump, this is a young lady... If you see two lumps (side by side vertically,) this is a young man.

On to feeding !

Green is for daily staples, Black is for treats, 1-2 times a week.

Feeding schedule. Lights on. 1 hour later offer the all day salad ( check list) and first insect meal. You will also need to be using a calcium 5 days a week, and a vitamin 1-2 days a week on this meal.
Amount of insects to offer, is as many as he/she will eat in a 15 minute period. Pull out all feeders that remain.
Allow at least 2 hours for basking/digestion before offering a second meal. No cal or vits on this meal . Only on the first meal of the day.
Allow 2 more hours, and at least 1 hour before lights off, for the 3rd and last meal of the day, again, as many as will ingest in a 15 minute period.

There you are... all you need for a feeding diet and schedule.
Now depending upon which UVB you have chosen, here are your calcium choices. If you have a Tube Reptisun 10.0 then this is what you need :

I've just been sprinkling my beardie's crickets 1-2 times a week with Reptical. Is that enough? I'm using a 22 inch 7% UVB compact fluorescent light by ESU Reptile.
