Were the crickets wandering loose ? Because they will escape and hide under things. On the other hand beardies do like to hunt them. If they are hiding they will do so during the day and come out at night.

We removed everything in his enclosure to see if they were hiding out somewhere and could only find the 2 left over crickets. And we literally took apart the entire enclosure to make sure they weren't hiding out somewhere.

O.K, make sure you look in the opening under the fake tree, I once found that a superworm had climbed up in one of mine, lol. But if he hunted them all down that's good, just be aware that they can hide, if they do they can go for your beardie to bite him while he sleeps as they seek moisture from around the eyes + mouth. If you leave some greens in the tank loose crickets will go for those usually. And did you check under the sand mat ?
