The number of coats will largely depend on the quality of the paint and the color. The paint I was using was pretty cheap and light, meaning it needed a few coats just to fully cover. 1 gallon will be more than enough for the interior. I did both interiors with a 1 qt. size can. Depending on how tight your seams are, you could get away with just using paint. The paint will fill in the seams (assuming they are tight seams). A few coats and the seam should disapear. If your seams are larger, you can use a paintable silicone caulk first, and then paint over the caulk. I would stay away from it. I haven't actually seen anyone use it as a substrate, however its a common material in building fake rock structures in enclosures.
