Beardies can change color over time getting more or less colorful. It’s cute that’s it’s just her head getting yellow! Definitely not yellow fungus. Yellow fungus grows asymmetrically, is often thick, and effects the texture of the scales.
She is adjusting her body to absorb more heat by getting darker. You will probably observe that she puffs up, or flattens out to increase surface area as well!

As long as you keep a close eye on humidity levels in your enclosure you don’t need to worry about overbathing. Every days is a lot, and really isn’t necessary.
