I have found some dual bulb t5 ho fixture that would work great in our vivs. I was wondering if it would be ok to run 2 Arcadia lights in one viv or would it be too much?

Limited279 since you are using plexiglass you can use decorative hinges instead of sliding them.

If you want to add rock to the top without all the glue you can use " fire resistant sealant" it's similar to expanding foam but you won't have to worry about the heat of the lights

If you're building out of wood you can use a table saw and just run your blade down the length of the wood. That way you can have each piece of glass in its own track so they don't get scratched up.
