Would this be ok as a substrate?

The textured side of that would be hard to clean IMO.
Textured tile is easy to keep clean and, sanitize. I you shouldn't use grout or thinset or, glues. Just put them in by laying them on the floor tightly. Plus, tile will cost a lot less.

I agree and it looks slippery -- I would leave the tile as is --- did you get a slated ceramic tile? Something w/ texture ?
