Those all sound like good foods for him, I'd also add some collard, mustard, and dandelion greens maybe. The previous owner fed him shaved carrots, and worms. She didn't say anything about calcium

Well whatever it is, it's still a loose substrate and needs to be removed to prevent any more health problems. Maybe Post a photo of the substrate with a closer look at it?
