I believe it's just a cockroach without its hard, crispy shell (i.e. it has molted) 
I imagine they'd taste even nicer to most Beardies, being even juicier. They're completely safe.

Yep that's just a dubia that just molted. They are a nice soft treat if you offer it, but if left the new shell will develop soon and it will look normal again.
